GOOD FOOD INSPIRATION

eatwell-livefully:

raw zucchini pasta duo. mini manicottis with macadamia-spinach ricotta & hearty sundried tomato-basil marinara. zucchini spaghetti tossed with olive oil, sea salt, nutritional yeast, & basil chiffonade, topped with marinara.

manicottis were made by making long, thin strips of zucchini with a swiss peeler, rolled up, & stuffed with ricotta.

spaghetti was made by slicing the thick zucchini strips into noodles.

Yum. I will be trying this one.
